There are many levels of wonderment when it comes to le fromage. There's "oh this would be tasty in a plucky grilled cheese," then there's "this cheese is so good I could eat a hunk of it like an apple," and then there's the really good stuff, "I would unabashedly punch a stranger in the face for another piece of this." The heavenly gouda made by the cheese-wizards at Holland's Family Cheese in Thorpe, Wisconsin firmly falls into the third category. They make cheese using old world techniques and recipes with milk from hormone-free cows - and the results are delicious. The signature Marieke Gouda ($12) is smooth and rich with nutty undertones, but they have twelve other different flavors worth sampling (read - devouring).
