We get ya, culinary school was always one of our dreams, too. But then we were distracted by other things. Mostly shiny objects and McDonald's hashbrowns (well, it's true!). But if you have more dedication than we do, and are into trying a little bit of self-learning, check out Modernist Cuisine: The Art and Science of Cooking ($468, preorder), by billionaire Dr. Nathan Myhrvold, out mid-March. And we know, 468 dollars is A LOT of money for a book set. But think of it this way: you paid that much for your college textbooks (or more!) and if a professional classroom setting isn't in your time-line or budget right now, you can stay in the culinary game with this incredibly detailed and fascinating set on the history of modern cooking techniques and flavor profiles.
