Special Guest Post by Industrious Justice: Cake in a Cup in 30-60 seconds

Here is a very special guest post that you are going to be extremely excited about. Seriously, it will change your life. At her blog, Industrious Justice, Emily Justice posts her favorite recipes, home de-cluttering projects, and her thoughts on being a wife, friend, non-profit employee, volunteer, advocate, karaoke singer, amatuer photoprapher... phew, are you tired yet? We are. It's not called Industrious Justice for no reason. Anyway, she recently posted something totally awe (and drool) inspiring, and here it is:

This is most definitely from the "I can't believe this actually works" file. This recipe was passed from my cousin, to my Mom, to me.

Cake in a Cup

Ingredients:
1 box angel food cake mix
1 box any other kind of cake mix (I used chocolate)
Water
Whipped Cream (optional)

Directions:
Empty both cake mixes into a large zip top bag, seal, and shake until well mixed.
Put 1/3 cup of mix in a large mug. (Seal the bag and save the rest for later.)
Add 3 Tablespoons water.
Mix well.
Microwave for 30 seconds (tall, big mug) or 60 seconds (wide, big mug).
Enjoy!
(Try mixing in a tablespoon of chopped up dark chocolate into the batter before microwaving. It creates little lava cake like bites. You're welcome.)

I know this sounds crazy but it totally works. In 30-60 seconds you will have cake in a cup. The bonus is that since half of it is angel food cake, it is low in fat. This also completely justifies the addition of dark chocolate bits and whipped cream, right?
