I'm in love with silpats, my all-clad pots & pans, and especially my microplane grater. It creates these amazing piles of cloud like parmesan cheese and is absolutely a must when making Italian dishes.

I like huuuuge cutting boards, especially bamboo ones these days. I also think cleavers are pretty handy even if you're not chopping up pigs. They're great for veggies too.
Everyone needs a solid mixer, and mine's a kitchenaid as well.

A stick of butter: cut into four equal pieces, then cut once through crosswise into eight equal pieces. Eight tablespoons of premeasured butter.
Great salt, preferably the French grey chunky variety. Finishes everything beautifully. Don't use crappy salt.

My Global Santoku knife is the chopping, slicing and cutting knife of choice 90% of the time. Well balanced, sharp, and downright purty.
A better question would be: What do you have in your kitchen that's absolutely useless? Poppyseed grinder? Automatic stirrer? Soft-boiled egg topper?
