You may not have your very own picturesque cabin in the middle of the woods, but that doesn't mean you can't eat like you've just foraged for your food. You know, if that's your thing. It's author Erin Gleeson's thing, and she shares her favorite simple, vegetarian recipes in her book, The Forest Feast: Simple Vegetarian Recipes from My Cabin in the Woods ($22). Technically, she doesn't create all of her meals from foraged foods, but most of them feature only a few ingredients, like her Sweet Potato-Stuffed Tomatoes, which require only sweet potatoes, salt and pepper, cream cheese, tomatoes, and Parmesan cheese. Easy, wholesome, and ridiculously delicious!
