Handcrafted chocolate confections have become increasingly popular and far more widely available in recent years. This could be partially due to the fact that techniques have been made easier with technological advances or simply that a major movement towards artisan foods is taking place. We would love to jump on the bandwagon and be able to create some one-of-a-kind pieces ourselves to impress our loved ones (and our tummy), so we've decided this cookbook entitled Chocolates and Confections: Formula, Theory, and Technique for the Artisan Confectioner is THE place to start. With over 140 different formulas, we've been creating a new intricate delicacy every weekend and inviting our girlfriends over for a treat! It's a win/win situation...
