There's a reason practically every professional chef from coast to coast has at least one SilPat Nonstick Silicone Baking Mat ($20) in their arsenal: these suckers work. No matter what you're doing in your oven: roasting vegetables, baking cookies, broiling fish, it won't stick to this. They're a lifesaver for any cook, but be warned: since they're made from fiberglass and silicone, do NOT cut anything on them or use knives on them, as you'll run the risk of getting silicone and glass shards in your food. Not so appetizing, that. To clean, simply rinse with hot water and wipe down with dish soap, then lay flat or hang dry.
