During our anniversary getaway, my husband and I had dinner at a sweet little tapas restaurant. One of my favorite dishes was zucchini and goat cheese rolls and I knew I'd be trying to make them again when we got home. I made these tasty bites to bring to a party, and they were quite successful. They went fast! I hope you all enjoy making, eating and sharing these Zucchini and Goat Cheese Rolls as much as I did.

I make these but with eggplant and goat cheese! I toast the eggplant gently on the stove in thin strips.
